Summer Patio Party Appetizers

Inviting friends and family over for the first get-together of the summer season? These delicious appetizers are easy to make and taste great.

Ingredients

Bacon, Apricot and Manchego Skewers
1/2 lb Beeler’s thick-cut sliced bacon, cooked, drained
1/2 lb dried apricots, halved
1/4 lb Manchego cheese, cubed
2 T chipotle chilies, minced
1/2 c honey
bamboo skewers

Tomato Caprese Skewers
1/2 c extra virgin olive oil 1/4 c white balsamic vinegar
1 pt grape tomatoes
2 oz fresh basil leaves
1 lb small, fresh mozzarella balls
salt and pepper to taste
bamboo skewers

Italian-Style Beef Rolls
1 1/2 lb tri-tip beef, seasoned, grilled and chilled
1 bunch asparagus
2 red bell peppers, quartered

Steps

Bacon, Apricot and Manchego Skewers
Skewer bacon pieces, apricots and cheese, alternating two of each per skewer. Warm honey and chipotles in saucepan and drizzle over each skewer. If skewers are chilled, microwave or bake very briefly until slightly warm; do not overheat or cheese will melt. Serve immediately.

Tomato Caprese Skewers
Combine oil and vinegar, adding a pinch of salt and pepper to taste. Skewer cheese, tomatoes and basil leaves, alternating each, as desired. Drizzle with olive oil-vinegar dressing, sprinkle with salt and pepper and serve immediately.

Italian-Style Beef Rolls
Season tri-tip with 1 t each salt, pepper, Italian seasoning and olive oil, then grill to medium rare. Chill and slice very thinly against the grain to create long strips. Toss asparagus and bell peppers in olive oil and lightly grill. Slice the peppers into thick strips, and roll two pieces of asparagus and one piece of pepper in a strip of beef. Drizzle with olive oil, salt and lemon juice.
