Preparation: make dough, set aside.
Cook Nueske’s Bacon until crisp; crumble; reserve drippings; set aside. Sauté onions in drippings; season with salt, pepper & thyme. Mix flour, salt, butter & cheese in a food processor. Blend until moist clumps form.
Shape dough into a 6” disk; wrap in Saran wrap; chill for about 1 hr. Roll out on a floured surface to fit spring-form pan. Combine eggs, half-n-half & seasonings.
Layer cheddar, apples & onions in the shell, and repeat layering. Pour egg mixture over layers.
Bake at 350° for 45 min, or until filling is set.
