Birrata Tomato Salad

This simple summer salad is a perfect use for juicy tomatoes and fresh basil. Fresh mozzarella can be subbed for the burrata, if desired.

Diet: vegetarian, GF (omit bread)

Ingredients

4 heirloom tomatoes, wedged
2 c mixed small tomatoes (grape, cherry, etc.), halved
½ sm red onion, sliced thinly
several small basil leaves
1-2 fresh burrata cheese balls (about 12 oz)
1 med garlic clove
½ t kosher salt
¼ c extra virgin olive oil
2 T white or dark balsamic vinegar
¼ t freshly ground pepper

Steps

Place cut tomatoes, sliced red onion, basil and burrata torn into pieces on platter. Smash garlic clove with salt under edge of large knife blade, repeatedly applying pressure with palm of hand and working knife back and forth slowly to make a salt/garlic paste (this is a Mediterranean technique for adding fine garlic to a dressing). Combine garlic paste with olive oil, vinegar and pepper. Drizzle dressing over salad. Serve immediately with fresh bread.
