Perfect for tailgating and game day parties, these sliders will score big with your home team crowd. Make them all or take your pick from three fun flavors – spicy buffalo chicken, lamb and feta or chorizo and manchego – and create a few fans of your own!

Ingredients

Buffalo Chicken Sliders
1 1/2 lb ground chicken
1/4 c yellow onion, finely chopped
1 T garlic, minced
1 egg, beaten
4 T Frank’s Original Red Hot Sauce, divided
1/2 t salt
1/4 t black pepper
1 T vegetable oil
8 slider buns, split *
Ranch Slaw

Ranch Slaw
2 c ea purple and green cabbage, finely shredded
1 c carrot, shredded
1/3 c ranch dressing

Lamb and Feta Sliders
1 1/2 lb ground lamb
1/2 t salt
1/4 t black pepper
1 t cumin
1/4 c yellow onion, minced
1 T garlic, minced
1 T olive oil
8 slider buns, split *
8 oz feta cheese
1 c Cumin Mayo
2 c Pickled Red Onions

Cumin Mayo
1 c mayo
1 T fresh lemon juice
2 t cumin
1/4 t salt

Pickled Red Onions
1 red onion, sliced thinly
1/2 T sugar
1 t Italian seasoning
1/2 c red wine vinegar

Chorizo Sliders with Manchego and Grilled Peppers
1 1/2 lb bulk Market chorizo
1 t ground cumin
1 t smoked paprika
1/2 t kosher salt
1 T garlic, minced
1/4 c yellow onion, minced
1 T olive oil
8 slider buns *
8 oz Market of Choice guacamole (packaged GTA)
8 oz manchego cheese, sliced thinly
1 orange bell pepper, cut into strips and lightly grilled
Tajin dry seasoning (Ethnic/World Foods Aisle)

Lime Sour Cream
1 c sour cream
1/4 t salt and pepper, each
1 lime, juice of
1 t Tajin dry seasoning

Steps

Buffalo Chicken Sliders
Combine chicken, onion, garlic, egg, 2 T hot sauce and spices, reserving 2 T Frank’s Hot Sauce for later. Warm 1 T vegetable oil in a skillet over medium heat. Form 8 patties and cook approx. 3 min on each side, until internal temp. reaches 165 degrees. Remove from heat, drizzle with 2 T hot sauce, place onto slider buns, then top with Ranch Slaw (recipe follows). Serve immediately.

Ranch Slaw
Combine all and chill until ready to use.

Lamb and Feta Sliders
Combine lamb, spices, minced onion and garlic. Form 8 patties and cook in 1 T olive oil over medium heat approx. 3 min per side, until internal temp. reaches 155 degrees. Place onto slider buns, top with feta, Cumin Mayo and Pickled Red Onions (recipes follow). Serve immediately.

Cumin Mayo
Combine all and chill until ready to use.

Pickled Red Onions
Mix onions with sugar and seasonings and cover with red wine vinegar. Chill a minimum of 2 hours. Pickled red onions are also available at your Market Salad Bar.

Chorizo Sliders with Manchego and Grilled Peppers
Combine chorizo, spices, garlic and onion. Form 8 patties and cook in 1 T olive oil over medium heat approx. 3 min per side, until internal temp. reaches 165 degrees. Place onto slider buns and top with guacamole, manchego and grilled bell pepper, then finish with Lime Sour Cream (recipe follows) and a sprinkle of Tajin seasoning.

Lime Sour Cream
Combine all; chill until ready to use.

* To make this recipe gluten-free friendly, use gluten-free buns. To make this recipe keto, omit buns.
