Shandong Style Asparagus

Shandong is the Chinese province just south of Beijing, and is famous for its Buddhist temples, sacred sites, and its bright, fresh food. Here we’ve tossed a Shandong dressing of toasted sesame oil, hot chili oil, sugar and soy sauce with steamed asparagus for a healthy and flavorful side. Try this dressing as a finish on other vegetables, as well as fish or chicken, or for dumplings.

Ingredients

1½ lb asparagus, base trimmed
½ c soy sauce, gluten-free
3 T toasted sesame oil
3 T water
2 T sugar
1½ T hot chili oil
2 T toasted sesame seeds

Steps

Combine soy sauce, sesame oil, water, sugar and chili oil until sugar is dissolved. Set aside. Trim the base of the asparagus, then steam or blanch in boiling water 2-3 min, until crisp-tender. Drain well and toss with dressing. Garnish with toasted sesame seeds.
