Ingredients

Merguez Lamb Sausage Rolls
4 Market Bakery seeded outdoor rolls, split and toasted
1/2 c tahini
1 T lemon juice, plus juice of 1/2 lemon
1-2 T warm water
pinch salt, pepper and cinnamon
2 T extra virgin olive oil
1 t sumac
1 Romaine heart, chopped fine
4 yellow cherry tomatoes, quartered
4 Merguez Lamb sausages, grilled
1/4 c dry cured olives (or other)
1/2 c labneh (yogurt cheese)
1 green onion, chopped

Hungarian Pork Sausage Rolls
4 Market Bakery “Everything” seeded outdoor rolls, split and toasted
3 lg radishes (red, Easter Egg or watermelon), thinly sliced
1 sm garlic clove, minced
2 T white wine vinegar
pinch black pepper
2 T chopped dill plus more for garnish
1/2 c sour cream
4 Hungarian pork sausages, grilled
1 c beet kraut, drained
1 white onion, sliced and grilled

Greek Spinach and Feta Chicken Sausage Rolls
4 Market Bakery seeded outdoor rolls, split and toasted
1 T + 3 T extra virgin olive oil
2 T lemon juice, divided
1/2 T red wine vinegar
1 t garlic, minced
2 t parsley, minced
1/2 English cucumber, diced
1/4 sm red onion, diced
1/2 orange bell pepper, diced
4 Spinach and Feta Chicken sausages, grilled
12 cloves roasted garlic (optional)
2 lg pepperoncini, sliced
1/2 c Greek yogurt
1 T chives, chopped
small mint leaves for garnish

Steps

Merguez Lamb Sausage Rolls
Combine tahini, 1 T lemon juice and water with a pinch of salt. Add 2 T tahini mix to each roll. Combine juice from half a lemon, oil, salt, pepper, cinnamon and sumac; toss with lettuce and tomatoes. Divide lettuce mixture among rolls, topping with sausages, olives, labneh and green onions.

Hungarian Pork Sausage Rolls
Combine radishes, garlic, vinegar, pepper and dill. Divide among rolls, topping each with 2 T sour cream, sausages, beet kraut, onions and dill garnish.

Greek Spinach and Feta Chicken Sausage Rolls
Combine 1 T olive oil, 1 T lemon juice and vinegar with garlic and parsley. Toss with cucumber, onion and bell pepper. Divide among rolls, topping with sausages, roasted garlic cloves (optional) and pepperoncini. Combine yogurt with 3 T olive oil, 1 T lemon juice and chives. Dollop onto each sausage, garnishing with mint leaves, as desired.
