Preheat oven to 450˚.
Toss together the cherry tomatoes, Oomph Cooking Blends, extra virgin olive oil, onions, balsamic vinegar, lemon juice, sea salt, pepper and pepper flakes, then spread mixture on parchment-lined baking sheet.
Roast for 25 to 30 min, until tomatoes begin to caramelize.
Remove from oven and GENTLY mash with a potato masher. (Be careful when mashing, some tomatoes may burst and will be hot.)
Add chopped basil, stirring everything together.
Serve warm or at room temperature.
Jar after cooled and store in refrigerator.
