Loco Moco

Loved in almost every Hawaiian island diner, Loco Moco is a delicious dish that features a seasoned and seared burger over rice, topped with mushroom gravy, a fried egg and onions. Our version includes pineapple fried rice, plus a splash of Sriracha to add some zip to your meal, before catching that next big wave.

Ingredients

Burgers
1 lb ground beef (85% lean)
1/4 c diced sweet onion
1/2 t salt and pepper

Shiitake Gravy
1 T coconut oil
4 oz shiitake mushrooms, sliced, tough stems removed
1/4 c sweet onion, diced
2 c beef bone broth or stock
2 T tamari soy sauce
1/2 T Worcestershire sauce
1 1/2 T cornstarch, mixed with equal amount of cold water
salt and pepper to taste

Pineapple Fried Rice
2 T coconut oil
1/2 sweet onion, diced
1 c pineapple chunks
4 strips soft-cooked bacon, chopped
2 c cooked jasmine or white rice, warm
salt and pepper to taste

Additional
1/2 sweet onion, cut into rings
2 T coconut oil, divided
4 eggs, fried
2 green onions, chopped
Sriracha or other hot sauce, as desired

Steps

Burgers
Combine all ingredients and shape into four patties. Sear in skillet over medium heat until desired internal temp is reached.

Shiitake Gravy
Cook mushrooms and onions in coconut oil until softened. Add broth, tamari and Worcestershire; bring to a boil. Add cornstarch and stir until thickened slightly. Add salt and pepper to taste. Keep warm. Can be made 24 hours in advance and reheated.

Pineapple Fried Rice
Cook diced sweet onion in coconut oil over medium heat until softened. Add pineapple and bacon and turn heat to high, cooking quickly until heated through. Add rice and toss to combine. Taste and adjust seasonings. Remove from heat, cover and keep warm.

Assembly
Fry onion rings in 1 T coconut oil over high heat until darkened; remove from pan. Add 1 T coconut oil to pan and fry eggs until over easy, or as desired. Divide Pineapple Fried Rice among four plates, topping with a burger, cooked onions, an egg and 1/4 c Shiitake Gravy. Garnish with green onions and hot sauce.
