Garlic and Herb Roasted Salmon and Asparagus

Garlic Herb Sheet Pan Salmon Asparagus

One pan meals always catch our eye, especially healthy, tasty and fast ones like our delicious roasted salmon and asparagus pan recipe. Simply cover salmon filets and asparagus with melted butter, herbs, lemon and garlic and roast until just cooked through. Perfect for a quick meal next to fresh pasta or rice.

Ingredients

2 lb baby or fingerling potatoes, halved
1 T extra virgin olive oil
¼ c butter
½ t ea salt and black pepper
1 T garlic minced
½ lemon, juice and zest of
1 1/2 lb salmon filets (6 oz each)
1 lb asparagus spears, trimmed
16 cherry tomatoes
1 T fresh dill, chopped
1 T fresh chives, chopped

Steps

Preheat oven to 400ºF. Combine potatoes with olive oil and pinch of salt and pepper. Spread on nonstick sheet pan cut side down. Bake for 10 min. Meanwhile, combine butter, salt, pepper, garlic, lemon juice and zest in small bowl. Remove potatoes from oven and push them to the edge of pan. Place salmon, asparagus and tomatoes in a single layer in center of pan and between potatoes; pour butter and lemon mixture evenly over all. Roast until salmon internal temp is 135ºF or pink in center and flakes easily. Garnish with fresh dill and chives then serve immediately.
