Fresh Basket Ricotta on Whole Wheat Toast

Ricotta Toast

Ingredients

1 loaf Honey Whole Wheat bread (fresh from our Bakery) *
12 oz Fresh Basket Ricotta (we recommend Bellwether Farms, found in our Specialty Cheese Department)

Berries & Honey
2 c mixed berries, washed and cut, if needed
2 T fresh mint leaves
¼ c honey, warmed slightly

Caramelized Bananas
2 T butter
2 semi-ripe bananas, sliced
4 T brown sugar

Dates, Pecans & Apricots with Olive Oil
4 pitted dates, sliced
¼ c toasted pecans (or almonds, walnuts, etc.)
¼ c dried apricots, chopped
2 T extra virgin olive oil
Fresh thyme and ground turmeric, for garnish, as desired

Prosciutto, Melon & Balsamic Vinegar
4 thin slices prosciutto, torn
½ c cantaloupe, chopped bite-size
2 T aged balsamic vinegar

Steps

Berries & Honey
Sprinkle berries and mint over cheese/toast. Top with warmed honey.

Caramelized Bananas
Heat butter over medium-high. Toss sliced fruit with brown sugar and add to pan in single layer. Cook 1 min per side, gently turning. Serve immediately over ricotta toast.

Dates, Pecans & Apricots with Olive Oil
Top ricotta toast with fruit and nuts, drizzle with olive oil, then sprinkle with herbs and a pinch of turmeric.

Prosciutto, Melon & Balsamic Vinegar
Layer prosciutto and melon over cheese, topping with vinegar.
