Combine beef with salt, pepper, and crumbled bacon. Divide into 8 equal portions and flatten into very thin patties (place between wax paper or plastic wrap for easy clean up).
Mix cheese, wine, Worcestershire, mayo and mustard and divide among four patties, placing in center and leaving a wide edge.
Place remaining patties over filling and carefully massage tops and bottoms together to make a good seal. Grill to med (160°) and let rest slightly before serving (filling will be very hot).
