Double-Cut Pork Chops with Cola Barbecue Sauce and Sweet Potato Fries

Cola BBQ Sauce Pork Chops

These thick-cut chops are juicy and delicious and feature a tangy, sweet barbecue sauce made with your favorite cola. Serve with grilled sweet potato fries for an amazing meal.

Ingredients

Pork Chops
4 double-cut porterhouse chops (purchase pre-rubbed from your Market Meat Dept. or rub with 2 T per pound of your favorite dry rub)
2 T olive oil

Cola Barbecue Sauce
2 c cola (Coca-Cola works well)
⅓ c brown sugar
1 c ketchup
⅓ c A1 Sauce
¼ c Worcestershire sauce
1 t liquid smoke
¼ c cider vinegar
2 T yellow mustard
1 t ea onion powder and granulated garlic
½ t ground black pepper
dashes of hot sauce, such as Tapatio, to taste
pinch of salt

Sweet Potato Fries
2 lb sweet potatoes, washed
3 T olive oil
1 T fresh thyme, chopped
pinch of salt and pepper

Steps

Pork Chops
Preheat grill. Drizzle chops with oil and place on hot grill, just until marked on both sides, 2 minutes per side (do not burn). Transfer chops to indirect heat (cool side of grill) and lower lid, cooking slowly until internal temp of 140° is reached (transfer to a cast iron skillet on grill, if necessary, to slow cooking). Let rest 5 min before serving with Cola Barbecue Sauce and Sweet Potato Fries.

Cola Barbecue Sauce
In a sauce pot over medium-high heat, boil cola and brown sugar until syrupy and reduce to about ½ cup. Add remaining ingredients and bring to a gentle simmer, lowering heat to medium, cooking 8 min to combine flavors. Use immediately or chill in an airtight container. Sauce will keep up to one month refrigerated.

Sweet Potato Fries
Boil potatoes just until soft in center (easily pierced with pick). Drain and wedge potatoes into eighths. Toss with oil and mark on hot grill. Season with thyme, salt and pepper.
