Baked Stuffed Honeycrisp Apples with Oatmeal Crumble

Backed honey crisp oatmeal crumble

Warm, comforting and full of flavor, these baked apples stuffed with oatmeal crumble is out of this world.

4 apples (honeycrisp or similar)
1 c gluten-free old-fashioned oats
¼ c packed brown sugar
¼ c butter, softened
¼ c pecans, rough chopped
1 t cinnamon, ground
pinch ground nutmeg
pinch salt
ice cream, as desired


Preheat oven to 350°. Core apples, leaving bottom intact; using a paring knife, cut away stem and seeds/core, then use small spoon to remove 1” diameter hollow in center. Combine oats, brown sugar, butter, pecans and spices, then stuff mixture into each cored apple. Place apples in baking dish and cover with parchment, then foil. Bake until apples are slightly tender and filling is bubbling, approx. 30 min. Uncover and continue baking until lightly browned. Serve warm with ice cream, as desired.
