Ahi Tuna Steaks
Marinated and seared to traditional perfection, our Ahi Tuna Steaks make for a beautiful plate served with pickled ginger and wasabi.
4-8 ahi tuna steaks (about 1 ½ lb total)
2 T ea black and white sesame seeds
1 T peanut oil
optional: pickled ginger (gari), dried seaweed (nori), wasabi
1/2 c Mirin cooking wine
1/4 c rice wine vinegar
1 t wasabi
1/4 c lemon grass, minced
2 T ginger, grated
1 T salt
1 T brown sugar
Reserve 2 T marinade and pour the rest over tuna. Marinate tuna 30-60 min, refrigerate, then press fish into black and white sesame seeds.
Sear in 1 T peanut oil over med heat being careful not to burn seeds and turning until desired temperature is reached (ahi is traditionally served very rare). Serve with Asian slaw, wasabi, pickled ginger, and seasoned nori seaweed if desired.
