Strawberry Lemon Tart

This month’s featured item is our Strawberry Lemon tarts. Just in time for berry season! I love the fresh glazed strawberries piled on top.

As a kid, after school released for the summer, to the berry patch we went. We would compete to see how many beautiful berries we could pick. My younger sister always picked faster bringing in the most. The competition made the work fun and we made jams and des¬serts with our freshly picked bounty. We saved the prettiest ones for topping desserts. So many great memories in the berry patch.

For this tart, we fill and bake the short crust with a southern lemon curd filling. It is a bit creamier than a traditional lemon curd. It still provides the tartness we love. Then we pile fresh lightly glazed strawberries on top. Each one is finished with freshly made vanilla whipped cream. This help us keep all of those berries on there. The combination of the sweet and tart is a crowd pleaser.
