Cantal Jeune Cheese

This delightful cheese, made in 80-pound wheels in the Auvergne region of France, is one of the oldest cheeses still in production and is believed to be the predecessor of the cheddars that would later become popular in Britain. Cantal Jeune is the youngest version of this cheese, being aged for about two months. It is very buttery and rich, with a pleasant yogurt-like tang but none of the sharpness we associate with cheddar. This is one of my new favorite cooking cheeses. It melts like a dream and is perfect for grilled cheese sandwiches, gratins or cheese sauces -- whenever you need a delicious, melty cheese. Find it at your local Market of Choice Cheese Shop.
