As founder of Lola’s Fruit Shrubs, Molly Rogers is carrying on a tradition that harkens back to 17th century England, when people used vinegar to preserve fresh fruits – a method that fell out of fashion when fruit could be preserved by refrigeration. But all was not lost.

Today, Molly is reviving this age-old method to create classic “fruit shrubs” with her own unique recipes, using live raw vinegar, fresh herbs and fruit sourced from the Columbia River Gorge and Willamette Valley.

These vinegar-based beverages, made in Eugene, mix well with spirits, soda and carbonated water for a healthy, fresh twist to everyday cocktails and mocktails.
