Growing up in a first-generation Mexican American family, Corina spent a lot of time in the kitchen at her mother’s side. “My mom would always say, ‘Come help me so you can learn.’”

Corina assisted her mother by gathering ingredients, stirring the pot, and cleaning up afterward. Those moments left a lasting impression on her. She later enrolled in The French Pastry School in Chicago, as part of an immersive six-month program, learning pastry, baking and confectionery arts. She worked as a pastry chef, making scratch-made cakes, cheesecakes, tiramisu and more at an Italian restaurant. She learned the ins and outs of operating a bakery while working at a small, family-owned business in the Midwest.

When she arrived in Oregon, she didn’t know much about Market of Choice, but she was excited to get started. She was hired as a cake decorator and now serves as the Assistant Bakery Manager at our Cedar Mill Market. What she enjoys most about her job is helping her teammates. “I really like the people here. They’re really friendly and everyone is really nice.”

In the future, she’d love to operate her own Mexican restaurant. “I want to showcase Mexican food in a different way – offer more than tacos and burritos – something a little bit nicer, with a higher-end environment,” she says.

When she’s not cooking or baking, Corina and her husband, Sergio (who works in our Market Meat Department) enjoy spending time with friends and family and pursuing their foodie endeavors. If there’s one thing Corina learned at her mother’s side, it’s that memories are made in the kitchen. “I now bake with my nieces and nephews. It’s a great way to bond with them. Food is something we enjoy as a family.”
