Salad:
2 lb carrots, julienned
1/3 c cilantro, coarsely chopped
1/3 c Moroccan or Kalamata olives, sliced
1/4 c almonds, sliced, toasted and slivered
2/3 c cumin dressing

 

Dressing:
1/3 c rice vinegar
1/3 c lime juice
2/3 c olive oil
1/3 t dry mustard
1/4 t ground cumin
1/4 t chili powder
white pepper to taste

Methods/Steps

Prepare salad ingredients. Mix dressing in small bowl. Pour dressing over salad ingredients.

Combine and refrigerate for a couple of hours. Serve chilled.
