6 egg yolks
1/2 c sugar
1/2 c Marsala wine
dash of vanilla and nutmeg, if desired

 

 

Methods/Steps

In double boiler, continuously whisk eggs, sugar, wine and spices until slightly thickened and doubled in volume.

Remove from heat. Continue stirring for a few seconds to avoid curdling.
