Savory and satisfying, this Southwest-inspired meatloaf created by your Corvallis Market Chef Kirk Veroneau has a touch of spice for just the right amount of flavor. Serves 8.

Cooking Method

2 lb Painted Hills ground beef
1 lb Carlton Farms ground pork
3 oz Embasa chipotle peppers, ground
4 Umpqua eggs
1/2 yellow onion
1 T fresh minced garlic
1 minced jalapeño 1, 4 oz can La Victoria chopped green chilies
6 oz Uncle John’s BBQ sauce
2 T chili powder
1/4 T cayenne pepper
1 T cumin
1/2 c Western Family brown sugar


Heat oven to 375 degrees. Combine all ingredients in mixing bowl until evenly mixed. Roll into 4” log wrapped in parchment paper (Reynolds Brand). Bake 45 min or until internal temp reaches 155 degrees. Let stand for 10 min. Unwrap and slice into 1” pieces. Top with Black Bean Topping.
