Carne Asada with Tequila Lime Sour Cream

Cooking Method

1, 2-3 lb flank steak or top sirloin
zest & juice of 2 oranges
1/2 can chipotles w/ adobo sauce
2 T coriander
1/4 t ea salt & pepper
1/4 t sugar
1 1/2 c sour cream
1/2 c tequila
pinch Spanish smoked paprika
4 lg tomatoes, halved & cored
1 lg sweet onion, sliced 1/2” thick
4 green onions, chopped
1-2 jalapeños, charred on grill, peeled & diced
zest & juice of 1 lime
2 T cilantro, chopped
1 T tomato paste
salt, pepper, & sugar to taste


Mix orange zest & juice, chipotles, coriander, salt, pepper & sugar to form a paste. Rub steak & marinate 6 hrs to overnight. Grill med rare (125° internal). Let rest and slice thinly across grain.

Mix 1 1/2 c sour cream with lime zest & juice. Carefully reduce tequila to 1 T & add a pinch of Spanish smoked paprika. Char tomatoes on grill until blackened; remove & chop. Grill onion & chop. Combine all & adjust seasonings.
