2 c flour
2 T sugar
1 T baking powder
1/4 t salt
1/4 c butter
1 egg, beaten
2/3 c light cream
1 c whipping cream
4 c sweetened, halved strawberries

Methods/Steps

Combine flour, sugar, baking powder & salt. Cut in butter until mixture resembles coarse crumbs. Add beaten egg & light cream. Stir with fork to moisten. Spoon onto cookie sheet.

Bake at 450° for 12-15 min. Whip cream in chilled bowl until soft peaks form.

Cut shortcakes in half. Add berries & cream. Top with second layer. Garnish with remaining berries and cream.

Serve while cake is warm.
