As third-generation cheesemakers, brothers Dwayne and Darryl Heap carry on a family tradition that began in 1921, when their grandfather, Clarence Joseph Heap, went to work under the tutelage of Paul Brog, a Swiss immigrant, then famous for his award-winning Swiss Emmentaler.
After their grandfather retired and sold his cheesemaking business, Glacier Mountain Cheese, Co. in 1954, Dwayne and Darryl decided in 2006 to start their own business. Today, the Heaps own and operate Vintage Cheese Co. of Bozeman, Montana.
Lovingly tended by masterful hands, Mountina is a raw-milk, washed-rind cheese that has a sweet, nutty flavor with a hint of raclett and the body of Emmentaler. Created with a thin wax coat that breathes, it tastes the same as when it leaves the creamery – the way it’s meant to be enjoyed.
