Sbrinz
When we say Sbrinz is a “giant” cheese, we mean it. Weighing in at 85 pounds, this super flavorful cheese has a buttery, nutty component and a hard texture that makes it excellent for grating over pasta. Made by a cooperative in Switzerland, Sbrinz is often referred to as the “Swiss Parmesan.” This behemoth is rarely found in American cheese shops, so we are thrilled to offer it this winter at an incredible price at just 16.99 lb. Camembert
Camembert is a cheese with a terrific reputation. Unfortunately, many Camemberts found in grocery stores are bland and overpriced, or overripe and bitter. Bayley Hazen Blue
Bayley Hazen Blue is one example of the amazing things happening at Jasper Hill Farms in Vermont. A natural rinded blue cheese, Bayley Hazen Blue is Jasper Hill’s original, flagship cheese. It is made with whole raw milk every other day, primarily with morning milk, which is lower in fat. Ayrshire milk is particularly well suited to the production of blue cheese because of its small fat globules, which are easily broken down during the aging process. Drier than most, this wonderful blue cheese has undertones of nuts and grasses and sometimes licorice.
