Once a year in a rotating city, the American Cheese Society (ACS) holds it annual judging of American cheese and dairy products. Hundreds of cheesemakers, mongers and lovers gather for a three day event of seminars, demonstrations, tastings and judging. Attendence averages around 800 humans and 1,400 dairy products.
