Ralph’s Favorite Pumpkin Muffins

Muffins
1 (15 oz) can pumpkin
1 c applesauce
2 lg eggs
1/4 c lowfat milk
3 c white 100% whole wheat flour (King Arthur)
3/4 c brown sugar
1 t baking powder
1/2 t baking soda
4 t cinnamon
2 t ground ginger
1 t ground nutmeg
1/2 t allspice
1/3 c golden raisins
1/3 c raisins
3/4 c chopped walnuts (optional)

Brown Sugar and Oatmeal Streusel
1/4 c butter (cold)
1/4 c brown sugar
1/4 c flour
1/8 c oats
pinch of salt
1 t vanilla

Methods/Steps

Muffins
Preheat oven to 350 degrees. In separate bowls, combine wet ingredients and dry ingredients, reserving raisins and walnuts. Slowly add dry ingredients to wet ingredients and mix well. Stir in raisins and walnuts. Fill muffin tin cups evenly to just below rim of the muffin tin and top with brown sugar and oatmeal streusel. Bake for 35 min.

Brown Sugar and Oatmeal Streusel
Use pastry cutter to combine until crumbly.

It wasn't clear if this recipe asked for tablespoon or teaspoon. The only indication was a t. I assumed it meant tablespoon so thats was I used. I haven't tried the muffins yet. The are still cooling. Also the streusel topping is not crumbly, it mushy. They looked ok out of the oven. Please be more clear when you list your ingredients. Thank you
