Top Sirloin Steak Salad with Warm Bacon Dressing

Ingredients

Steak:
1 lb top sirloin steak
salt and pepper to taste
extra virgin olive oil

Green Salad:

5 oz mixed baby greens with spinach and arugula
1 ea red and yellow bell pepper, sliced thinly
1 red onion, sliced thinly
1/4 lb Oregonzola cheese, crumbled

Dressing:
2 slices bacon, diced
2 T extra virgin olive oil
1 t garlic, minced
3 T honey mustard
1/4 c walnut halves

Methods/Steps

Season steak well with salt and pepper, and drizzle with extra virgin olive oil. Grill steak over high heat to desired temperature. Let cool for 5 min and slice thinly. Meanwhile, prepare salad and top with sliced steak.

For warm dressing, sauté bacon in extra virgin olive oil until browned, then add garlic and honey mustard. Whisk together until combined. Add walnuts, and pour over steak and salad. Serve immediately.

Optional: Slice a baguette, brush with olive oil, toast and serve alongside for garnish.
