Holiday New York Strip Loin Roast
4-5 lb Painted Hills Boneless Beef New York Strip Loin Roast
4 garlic cloves
4 t fresh thyme leaves
4 t olive oil
4 t salt
1 1/2 t ground black pepper
1 t paprika
1 T parsley
With machine running, drop garlic into processor; blend until finely chopped. Add thyme, oil, salt, pepper, paprika & parsley. Process until paste forms.
Pat meat dry with paper towels. Rub meat all over with herb paste. Cover; chill at least 3 hrs. Refrigerate. (Can be prepared 1 day ahead & kept refrigerated.)
Preheat oven to 450°.
Place meat, fat side up, on rack in roasting pan. Roast meat 15 min. Reduce oven to 350°. Roast meat until instant-read thermometer inserted into thickest part of meat registers 130° for med-rare (about 70 min) or 140° for med (about 75 min).
Remove from oven; let stand 20 min. Cut crosswise into 1/2”-thick slices.
Preparation time: 3 hrs, 15 min. Cook time: 85-90 min.
Decorate! Arrange slices on white platter. Spread parsley & paprika around outside of plate for a beautiful holiday display!
